Charcoal Barbeque Grills
The origin of people grilling in America goes all the way back to pre-colonial times. Native South American Arawaks used a wooden structure called a barbacoa to roast their meat. This word evolved to barbeque to describe the pit style cooking of hogs in the Southeastern United States, thus the art of charcoal barbeque grilling came to be.
E.G.Kingsford developed charcoal, the fuel for barbeque, as we know it today. Kingsford was related to Henry Ford and used the large amounts of scrap wood from the Model T Production lines to make charcoal. George Stephen was a welder for the Weber Company who primarily made buoys from steel spheres welded together. The spherical design of modern grills was created by George. His neighbors coined it the ‘sputnik’. George cut the sputnik in half, taking the lower half of the buoy and welded legs on it. A smaller sphere was made for the lid and magically the half buoy became a grill.
In 1960 outdoor gas grills were invented in Arkansas as a method of selling natural gas to residential customers. William Wepler bought a traditional grill and modified it in his garage to use natural gas as fuel. The gas grills of today can be small as a portable one steak model scaling up to large models that can cook for dozens of people.
The most simple and basic charcoal grill is called a brazier. It resembles an open pot with no lid or vents. The brazier is a simple pan, usually on legs, with a cooking grid that can be moved up or down over the fire. These grills are still available today. Disposable ones are available for sale in most grocery stores.
Gas grills are the preference to many, but most competitive cooks prefer to use charcoal fuel to barbeque. They relish the smoky taste and different flavors that can be achieved using different types of wood. Most favorite barbeque grills are large and custom made. Some are so large they are pulled on wheels behind a truck. Competitive charcoal barbeque contests are held all around the country.
But for most of us who just enjoy cooking out on the weekends, a simple charcoal grill will do nicely. Don’t limit yourself to grilling just burgers and hot dogs on your charcoal grill. Try some chicken, fish, vegetables or even pizza on the grill. You'll become an accomplished barbecue chef in no time at all.
